Ingredients List
- For the rice
- 1 cup uncooked long-grain rice
- 2 cups chicken broth (low-sodium recommended)
- 1 tsp olive oil
- For the chicken and sauce
- 2 medium chicken breasts, cut into bite-sized cubes
- 1/4 cup all-purpose flour, for dredging
- 2 tbsp butter (for cooking chicken)
- 1 cup chicken broth
- 2 tbsp butter (additional, for sauce)
- 1/4 cup dry white wine (optional; can substitute with more chicken broth)
- 2 cloves garlic, minced or pressed
- Juice of 1 whole lemon
- Salt and pepper, to taste
- Optional sides: Green beans, broccoli, Brussels sprouts, or roasted sweet potatoes
- Optional garnish: Fresh parsley or a small pinch of lemon zest
Method
- Cook the rice: In a medium pot, bring 2 cups chicken broth and olive oil to a boil.
- Once boiling, reduce heat to a simmer. Add the rice, cover, and cook until tender, about 15–20 minutes.
- Prepare the chicken: While the rice is heating, cut chicken into bite-sized cubes.Dredge the chicken cubes in flour, coating each piece evenly.
- Cook the chicken:Heat a skillet over medium heat and add 2 tablespoons butter.
- Add the chicken cubes and cook until golden brown on one side, about 6–7 minutes. Flip and cook the other side until browned and cooked through.
- Make the sauce: Reduce heat slightly and add 1 cup chicken broth, remaining butter, lemon juice, white wine, and minced garlic to the skillet.
- Stir and let the sauce simmer until it thickens slightly, about 3–5 minutes. Taste and season with salt and pepper as needed.
- Serve: Plate a scoop of rice, top with the chicken and garlic wine sauce. Serve with your choice of simple side vegetables.
Success Tips
Rice Texture: Don’t lift the lid while it’s cooking—this helps the rice stay fluffy.
Evenly Cooked Chicken: Make sure chicken cubes are roughly the same size so they cook evenly.
Timing: Start the rice first, then prep the chicken. This keeps everything finishing around the same time.
Flavor Boost: Fresh lemon juice gives the sauce a bright, fresh flavor. Fresh parsley is optional for garnish.
A splash of extra butter at the end can also mellow the tang while keeping the sauce rich.
