- Small/Medium Yellow Onion, diced
- 3-4 Garlic Cloves, grated
- 1 Cup Orzo
- 1 Cup Rice
- 3 Cups Chicken Broth
- 1 Lemon, juiced
Method
- Melt the butter in a small saucepan over medium heat. Once melted, add the diced yellow onion and cook until soft and golden. Add the grated garlic and cook for about 30 seconds, until fragrant.
- Add the orzo and remaining butter, stirring to coat. Let the orzo toast until lightly golden.
- Stir in the rice.
- Pour in the chicken broth and add salt, if desired. Bring to a gentle simmer, then reduce the heat to low and cover. Let cook until the liquid is absorbed and the rice is tender.
- Squeeze fresh lemon juice over the pilaf just before serving.
